When the mercury dips below freezing and skiing conditions are not ideal, the opportunity to warm up in the kitchen is a good one. Cooking classes can be a fun and educational way to learn tips and tricks, meet like-minded people and spend the day tasting great food made with fresh ingredients. For the food-lover looking to expand their repertoire, the Berkshires offers single-day experiences or weekend-long cookery holidays in intimate settings for participants at all levels. Following are just a few of the countless ways to get a taste of the Berkshires this winter.

Weekend Culinary Experiences at the Gateways Inn

Located in the elegant 1912 Procter mansion in Lenox, the Gateways Inn is offering a series of culinary retreats every month through April. Weekend classes at the inn’s restaurant La Terrazza, a favorite hangout for iconic painter Norman Rockwell, will highlight different cultural themes including Italian, French, Mediterranean and Mexican cuisine.

The Gateways Inn chef and sous chef team will lead an all-day, hands-on culinary immersion where guests will participate in chopping, slicing and dicing and prepare a gourmet lunch and dinner, accompanied by wine. Each weekend culinary retreat includes a meet-and-greet social hour, a group dinner with wine and a full European-style breakfast in addition to the meals prepared during class. The Meat Market’s Pig University and Kitchen Workshops

Kitchen and butchery workshops make The Meat Market a destination for unusual, informative and fun food-related action year round. A locally-sourced, nose-to-tail butcher shop and cafe located in Great Barrington, The Meat Market presents Pig University this winter. Pig University is a fun and educational series of butchery classes, taking students on a journey from nose-to-tail and teaching how to use every scrap of delicious heritage pork, from the fundamental cuts and cooking methods to the traditional methods of curing and smoking. Basic Butchery, Nose-to-Tail Cooking, an Intro to Sausage Making and Basic Charcuterie are on offer from January 18 through April 12. Tastes and samples are included in all classes, available individually or as a package.

Also this winter, Kitchen Workshops at The Meat Market will explore key fundamentals for working with a range of ingredients and preparing a variety of dishes to elevate kitchen skills. Beginning on Saturday, February 1, workshops will highlight Braises, Stocks, Soups and Stews; Secrets of Fresh Pasta; Knife Skills, and Classic Technique. Healthy Living Cooking Classes at Canyon Ranch
Canyon Ranch, the world’s recognized leader in healthy living and luxury spa vacations, offers guest cooking workshops every day. A
variety of different classes are available in their beautiful, newly remodeled demo kitchen including Cooking for One, Superfoods, Soups, Seafood and a unique class called Fastest Meals Imaginable. Whole Foods with Kosmic Kitchen

Kosmic Kitchen offers programs and courses (online and in person) founded on the healing properties of whole-food, nutrient-dense, plant-based eating. Beginning on Tuesday, February 18, Kosmic Kitchen will present Whole-foods for Busy People, a five-week course for people interested in eating more whole grains, beans and vegetables but don’t have the time or the know-how to make the shift. Five one-and-a-half hour classes will include topics such as 30-minute dinner ideas, crockpot meals, how to plan energy-boosting lunches, blender soups, sauces and smoothies, and how to cook ahead to save time and money. All classes will include emailed recipes, lots of tasting and plenty of time for discussion. Later this winter, Kosmic Kitchen will offer A Day in the Life of a Whole-Foods Adventurer workshop.
